Kielbasa and Pepper Hash

This is one of my all-time favorite meals.
I found a recipe that was similar to this and adapted it to be a bit healthier and more my taste. When I buy the items for this meal, I usually make it that very night because I can't wait to have it. Even Victoria digs into this very enthusiastically.

So here is how to make my very simple favorite meal

Ingredients
- 14oz package of Turkey Polska Kielbasa, cut in half length-wise and sliced
- 1/2 large sweet onion, diced
- 2-3 any color bell peppers, diced
- 2-3 large sweet potatoes, pealed and diced
- salt and pepper to taste
- Oil for sauteing

Heat oil in a large pan, and saute the diced sweet potatoes on medium heat so they cook through, stirring frequently. I like to allow mine to get a little browned (blackened?) so they aren't mushy. This usually takes about 10 minutes

At the same time, saute the kielbasa in oil over medium heat (stirring frequently), also allowing it to get slightly browned. That will only take about 5 minutes.

When you are finished browning the kielbasa, transfer it to a bowl and rinse the pan. I reuse the same pan to saute the onion and peppers. In this case I used a variety of mini bell peppers because that it what I had on-hand. Saute on medium heat until peppers are tender, usually about 8-10 minutes (stirring frequently).

When everything is cooked through, simply mix them together and add a little salt and pepper if you desire (I don't usually need to as the kielbasa has such a great flavor).

  1. This is one of those good old fashioned comfort food dishes from our early years as a married couple. We ate it because it was cheap and we were broke. We kept on eating it because it was easy and we still eat 20 odd years later because we love it.
