I heard about this new snack in passing and thought "this is one of those super healthy snacks that people claim are good but really they are just healthy and people delude themselves into thinking they are good!". Like Kashi brand, like wheat grass, like lima beans.
So it is with some surprise them that I introduce you to my new favorite snack .....
That's right, this is Kale. I have tried to eat it before, as I have heard of how healthy it is for you, but it has such a strong taste and rough texture, it is difficult to eat in salads or anything.
Well, someone told me last week that one of her favorite snacks is kale. She said to just wash it, put the pieces on a baking sheet, sprinkle with salt, and roast it at 350 degrees Fahrenheit for about 3 minutes.
Again I had my doubts.... this was wheat grass and Kashi all over again!
Well, I bought some kale and made it just this way and when I walked into the kitchen to take it from the oven there was this amazing scent lingering in the kitchen. I looked at my husband and he said "whatever that is, it smells amazing!". I took it from the oven and we both tried it. My husband is not a veggie man, but even he had to admit it was very good. The roasting crisped the edges just right, and the saltiness added the perfect accent. The roasting also seemed to bring out this hidden, great taste within the kale. AMAZING! I love it! I have made it twice this week already and am so happy I found a way to cook this super healthy vegetable that makes it not just tolerable, but delectable.
